Gunn’s Hill Artisan Cheese is a small artisan cheese plant nestled within the rolling hills of Gunn’s Hill Road in Oxford County. Owners Shep Ysselstein and Colleen Bator are proud of the thriving little business that is now seeing their cheeses in over 300 locations across Ontario! The cheeses produced at Gunn’s Hill Artisan Cheese are truly unique — although you can taste the Swiss influence from techniques and recipes founder Shep learned while making cheese in the town of Handeck, in the Swiss Alps.
The Scene
The cheese plant is located within the heart of The Dairy Capital of Canada and is only minutes away from downtown Woodstock. The milk used to create the cheeses comes from the neighbouring family dairy farm, Friesvale Farms, where the finest Canadian milk is produced. To ensure cheeses that are of top quality and taste, Gunn’s Hill Artisan Cheeses are hand crafted using traditional cheese-making methods.
Visitors are welcome to visit Gunn’s Hill Artisan Cheese to experience the unique area, learn about dairy farming and local agriculture, take a tour (must be booked ahead of time) and most importantly, simply enjoy wonderfully delicious cheeses.
The Cheese
Gunn’s Hill Artisan Cheese is a leader in the production of handmade artisan cheeses in Ontario. Today, there are two full time cheese makers and a team of staff that work diligently to produce some of Canada’s finest award-winning cheeses. With over 15 cheeses to choose from, the variety of flavours has never been more vast and delicious.
Best-selling favourites include 5 Brothers, with creamy flavours and sweeter overtones. Handeck is a drier hard cheese with rich complex flavours and nutty overtones. Tipsy, soaked in red wine before aging, is a mild creamy cheese with buttery flavours. Oxford’s Harvest is a mild creamy cheese with lightly lactic and buttery flavours, also available in several variations, such as “Garlic & Chives.” Fresh Cheese Curds are available Thursday and Friday afternoons. Their rich flavour and “squeak” makes a great snack or can be melted in a number of delicious ways. But there are too many cheeses to list them all. A visit to the well-stocked shop is a treat, but you can also purchase online with efficient reasonable shipping.
