Local Distilleries & Cideries Perth County

Written by The Editors

What’s in a name? Junction 56 pays homage to Stratford’s early history as a railway town. The distillery, located in a former 100-year-old lumber yard, has a set of tracks running directly behind it, with another track a block away. The junction of those two major railway lines was built in 1856. The city was built up around it and trains still run by the distillery every day.

Menu Highlights

Junction 56 Distillery uses only 100% Ontario-grown grains to produce small batch, superior spirits including whisky, vodka, gin, and moonshine. The corn and wheat used come from owner Mike Heisz’s cousin’s farm, an hour north of the distillery. The grains are milled on site to ensure quality control, and modern batch distillation techniques result in award-winning handcrafted products. Junction 56 products have zero artificial colours or flavours. What you see is what you get. Recommendations include:
Mint Smoothie Liqueur, created with local partner Rhéo Thompson Candies, a spirit that captures the luscious qualities of a Mint Smoothie;
Pink Gin, subtly sweet yet tart with floral rose petal notes;
Canadian Whisky, four balanced grains aged to perfection in oak barrels.
